
Les Amandiers is a 100% Pure Syrah from some of our oldest vines in the Cru La Livinière. The grapes are fermented in equal part wooden conical shape “foudre” and non-reinforced natural concrete egg fermenters. Only natural yeasts from our vineyard are utilized using a “Pied de Cuve” technique. The idea is to cultivate the yeasts that are on the skins of the grapes a week prior to full harvest . We crush some grapes early and encourage the growth of those yeasts. At harvest, the tanks are then “spiked” with those natural yeasts. It is more complicated than simply adding a bag of commercial yeasts but we believe that it adds real complexity and it ensures that our wine stays a true reflection of one unique terroir.
We then leave “Les Amandiers” for 4 to 6 weeks in the fermenters with some gentle pumping over and drainage to extract fruit but above all, we believe in letting things happen rather than work too much on
